it is a fun "finger food" party. :)

Danke for looking!

Great idea! I have never seen anything like that!
I´ll copy that - if I can get the crawdads.

Jeanie, please would you be so kind to post a pic of the crab boil you use to use for seasoning? Most of us here in that forum stumble about that ingredient . . . .

And what do you have in these little bowls? Looks like some kind a margaritas or tequila sunrise

BTW: Your cooking area looks like the showroom of my bbq equipment dealer . . . You can feed a crowd! Amazing!

this looks awesome

takes fingerfood to the next level

:sun:

Give us 16h. We're on the way to the airport :)

Looks awesome! Fantastic finger food!

Amazing!!! Cooking area and the Krabbelmänner, AMAZING :pirateshocked:

:piratethumbs: I like that. Great!
I've seen it already on TV, in german called "Verdammt lecker - Nachschlag für Adam Richman"

Thank you Jeanie for this post - you hooked me totally now . . .

On the crab boil seasoning:
You might use Zatarain´s or Old Bay Seasoning, I guess.
I checked on both: Zatarain´s is unavailable here; Old Bay 6 oz. for U$ 8,80.

Also I stepped over a recipe for homemade crab boil seasoning:

  • ¼ cup season mix, such as for canning cucumber
  • ¼ coarse sea salt
  • 2 Tbs mustard seeds (white, black, yellow - I have no idea, but I like it authentic)
  • 2 Tbs black Peppercorns, whole
  • 2 Tbs chili flakes
  • 1 Tbs celery seed
  • 1 Tbs dryed chives
  • 2 Teaspoons ground ginger
  • 2 Teaspoons dried oregano
  • 5 bay leaves

processed in a blender and kept in an airtight container.

What do you think about this?? Might that work?
Does it make a sense to use this or would you prefer using Old Bay Seasoning?

On the corn cobs:
We have pre-cooked sweet corn cobs here, canned ones (also pre-cooked) and sometimes, just in the fall season, we get fresh sweet corn, still covered in their leaves.
Or do you use quiet normal corn, such as animal food?
Your corn on the cobs is bicolor: yellow and white. Is this the kind of corn hominy is made from?

It seems, you are using a turkey fryer set. I need to get a big basket for my canning cooker, that might work.

Also I am thinking about the crawdads, wich are rather expensive here. What do you think about substituting them with unpeeled shrimps or scallops or mussels?

Questions of questions

Hope, you don´t get bored . . .

Rolf I am glad you liked it!
They are easy parties...not much work. :)

My favorite crawdad boil seasoning is from Louisana Crawfish Company... it will season 15 pounds of crawdads.

and I like these bags of seasoning. You put these in the pot unopened. They will season 4 pounds of crawdads.

or you can use the liquid seasoning....

The recipe you posted should be fine! I think it will be better than Old Bay. It will be more authentic to the way Crawdads are seasoned.

The corn I used is just sweet corn. It comes on the cob with the husks on. Your pre-cooked sweet corn would work fine. It will need to sit in the water to soak up the seasonings and become spicy.

You can cook the crawdads, corn, tatoes... etc.. without using a strainer in the pot but it is a LOT easier to get them out of the pot when it is cooked when you have the straining basket. :)

It is fine to add other seafood. I love shrimp and sometimes add crabs or crablegs to the pot.
I have not tried muscles or clams, not sure how they would work or if they would get tough.

The sauces on the table are butter with garlic and lemon juice. The red sauce is a horseradish tomato sauce. They are great for dipping the food.

Rolf you don't make me bored! I enjoy talking to you and learning your way of cooking too. :)
