Outlaw Rolf sent a nice gift to me! A beautiful stainless steel fatty piston and chocolate!

I made a fatty using the new piston.

used cold smoked back bacon...

fried bacon, potato, onion, jalapeno pepper, garlic... and smoked cheese.

filled piston and chilled

wrapped in bacon weave..

into UDS 275 degrees F
cooked to 165F internal temperature

with poached egg and hollandaise sauce..

Rolf, thank you again for the gift! The piston works great!! This is the first time I have had the chance to use it. I love the chocolates too..

It was the first cook on the new drum.

I think you were right before when you said the bacon here is different from what you have. That must make the weave come out different.
