Gift from a friend.... Boer goat meat.
I made a mixture of garlic powder, paprika, black pepper, rosemary, thyme.. About one Tablespoon of each.
Then combined 1/2 cup A-1 steak sauce, 1/4 cup of worcestershire sauce, about 1/4 cup of bufalo chipotle sauce and 1 cup of water.
Into Big Poppa UDS...275F with mesquite wood.
made refried pinto beans... Lard, onion, garlic, cooked pinto beans, salt and pepper..
smoked until tender. added beef stock when needed...
fried Yuca root... remove inner stem, parboil in salt water, then brown in skillet with butter.
Goat meat tacos, refried beans and fried yuca root...
With the remaining goat meat I made Huevos Rancheros...
and nachos... tortilla chips, goat meat, scallions, dry rub, smoked cheese and a sqeeze of fresh lime juice..
