These are called "Game Hens"... They are young chickens.


Brine....
water, salt, sugar, cayenne peppers, onion, garlic, bay leaves.

Big Poppa und Soileaus dry rub...

into Hasty Bake..

und smoked rice...

I use instant rice in chicken stock. I add minced onions to the stock...then place on the top shelf of my smoker. I leave the rice uncovered and let it smoke until all of the liquid is absorbed. Then I remove from the smoker and cover with foil until time to eat.
I also like to add morel mushrooms when I have them.

Either your Hasty Bake is brand new, or you do not use ´em very often or you are more cleaning than grilling . . . .
After three chicks, my equipment looks real horrable.
