The venison is white tail deer from hunting season.
For each 3 lbs of venison burger
1 cup water
1 tsp. mustard seed
1/2 tsp. garlic powder
1/4 tsp. onion powder
1 1/2 tsp. onion flakes
2 TBs. Tender Quick
venison burger... 3 parts venison ground with 1 part pork fat.
added some ground beef...
chill overnight
onto BPS UDS...
smoked at 150F then up to 175F
rotated snack sticks for even cooking..
removed at internal temperature of 165F..
taste test.
cut and wrapped...
venison snack sticks with cheese, olive oil and spices...
I have them saved in my freezer for snacking.
