Seasoned beef chuck with smoked salt, cracked black pepper and garlic...

onto UDS at 275F with mesquite wood chips...

smoked 2 hours then added beef stock and onions. Covered with foil...

cooked 3 1/2 more hours until tender...

Made Indian (Navajo) fry bread...

2 cups flour
1 Tablespoon baking powder
1 teaspoon salt
mix and add
1 Tablespoon of lard or shortening
then 1/2 cups of warm water.
knead and let it rest covered for 30 minutes.

Pulled beef in 5 1/2 hours, that must be a new record. I remember spending almost 50 hours once.
